What is Cellulase for?

The human digestive system cannot breakdown plant fiber without a little help. The major issue is the cell wall, a fibrous complex that surrounds the plant cells. A major part of these cell walls is something called cellulose. The cell walls of fungi, including Candida, are also made of cellulose. For us to digest plant cellulose, we need the enzyme cellulase.
